I do not know about you but it seems to me like the healthier I eat the more I crave ... Chocolate! I never was a big chocolate user but the past few years I love it! Especially dark chocolate which not only contains antioxidants but has been deemed heart healthy! That's right numerous studies have sited how it can lower your blood pressure and cholesterol! So if you are going to sneak a tasty treat have some dark chocolate and feel secure knowing it is good for you in moderation.
Anyway! I came home today and had one of my cravings and decided to make a tofu chocolate pudding. I came across numerous easy recipes on the internet so I figured I would just experiment and try my hand at using silken tofu. I bought the organic Nasoya brand.
1 package organic Nasoya Silken Tofu
1 organic avocado
1 TBSP cinnamon
1/4 cup organic dark cocoa powder (you can use 1/2 cup semi sweet melted chocolate chips too just add less honey depending on how sweet you want it)
1/4 cup local honey (or local maple syrup)
1 TSP organic fair trade vanilla
3/4 cup organic black raspberries (optional and any berry will do)
(How many super foods did you count in the above treat?)
Want something even easier? Use the above recipe but only use the tofu, chocolate, cinnamon and honey! Or avoid the chocolate all together and use the vanilla and berries instead.
1 package organic Nasoya silken tofu
2 tsp organic fair trade vanilla
1/4 cup local honey(or less to taste/can use maple syrup)
1 tsp lemon juice
1 TBSP vegetable oil (any type of oil will do)
1 pinch of cinnamon
(you could also add 1/4 cup berries to this instead of the pudding)
Mix in a food processor for several minutes and store in your refrigerator until ready to use. So easy! So good! Enjoy!!
